Why spend over the odds for a packet of spices filled with added sugar for no apparent reason. Chicken Fajitas can be made in next to no time with ingredients you probably already have in your cupboard and spice rack. The fact they’re healthy and taste great is an added bonus!

  • 300 g Skinless and Boneless Chicken Breast cut into strips
  • 1 tsp Smoked Paprika (Pimentón Dulce)
  • 1 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • ½ tsp Ground Coriander
  • ½ tsp Cayenne Pepper
  • ½ tsp Freshly Ground Black Pepper
  • ½ tsp Sea Salt
  • 2 tbsp Olive Oil
  • 1 Red Onion peeled and thickly sliced
  • 1 Red Pepper deseeded and thickly sliced
  • 1 Green Pepper deseeded and thickly sliced
  1. Put the chicken into a zip lock bag along with the spices, herbs and 1 tbsp olive oil. Agitate until the meat is coated with the spice mix and allow to marinade for 10 minutes.
  2. Heat the remaining olive oil in a heavy frying pan or skillet, then add in the onion and peppers. Fry over a medium-high heat for 2-3 minutes until just starting to soften.
  3. Add in the chicken and spices and stir well to ensure everything gets a coating of the flavoured oil. Keep over the heat for another 8-10 minutes until the chicken is cooked through, remembering to stir regularly to avoid anything burning and ensure the chicken is properly cooked.
  4. Serve immediately with the accompaniments of your choice...
